California Fish Grill Partners with Curbit to Enhance Kitchen Operations and Digital Order Accuracy Across All Locations

Fast Casual Restaurant Brand Focuses on Operational Consistency and Kitchen Capacity Management to Support Better Guest Experience

Unlike many brands that use ROI as the deciding factor for technology adoption, California Fish Grill took a different approach. The leadership team focused first on establishing speed of service and kitchen behavioral consistency through Curbit’s analytics—specifically targeting “KDS bumping behavior” and misaligned quote times.

The 30-day Curbit pilot included over 67,000 orders across six California Fish Grill locations in a controlled A/B test format. Sites using Curbit saw:

  • Quote time accuracy improve from a 6-minute miss to just 1.5 minutes

  • “Goldilocks Zone” promise time (within ±2 min) increase from 9% to 44%

  • Food dwell time over 5 minutes drops from 61% to 13%

  • Guest frustration and lobby congestion dramatically reduced

     

     

cfgimage111822_LaHabra_B_V2Curbit leveraged real-time kitchen data through its integration with QSR ConnectSmart to dynamically adjust Olo quote times in real-time and update guests via SMS with order progress and pickup instructions.

As part of its “walk-before-you-run” strategy, California Fish Grill will initially deploy Curbit with a focus on operational discipline and timing alignment, then gradually layer in additional features demonstrated during the pilot to optimize throughput and the guest experience.
